Diet studies, meat and cancer

I'd like to hear why, when evidence leads to the conclusion that smoking contributes to lung cancer, researchers and doctors recommend quitting the habit, but when evidence suggests that eating the flesh of cows, pigs and lambs is directly linked to colon (bowel) cancer, researchers and doctors say "one should reduce one's consumption of red meat."
